We are an eco-aware restaurant offering a tasting menu with a big nod to doing what we can to eliminate waste, chemicals and unnecessary carbon trails. It’s all about preserving & enhancing what we have on earth. Our dishes are inspired by worldwide cuisine but are made from mainly British ingredients that we make or grow ourselves, forage from the local area or source from the most ethical places around the UK.
All of our fruit and vegetables come from Sopley and Badger farm just 5.6 miles down the road. We also use the Isle Of Wight Tomato Stall because of their outstanding tomatoes! We use mainly British ingredients in our cooking and the base of many of our dishes uses produce from these local suppliers.
Throughout the year, we preserve ingredients, from both the farm and foraged by the team. Be it salting, vinegar, fermentation, cordials, pickles, dried items, the list goes on. This allows us to extend seasons considerably, bringing lightness and acidity to dishes all through the year and most of all, add huge unique flavours. It underpins everything we stand for within our style of cooking.
Everything is cooked over open fires in our open kitchen.
We use seasoned hardwood, sustainable hardwood charcoals, local vineyard grape vines and even vegetable trim to smoke on certain dishes.
We were awarded a MICHELIN Green Star in the 2022 & 2023 edition of the MICHELIN Guide Great-Britain & Ireland. This award highlights restaurants at the forefront of the industry when it comes to their sustainable practices. They hold themselves accountable for both their ethical and environmental standards and work with sustainable producers and suppliers.
These restaurants offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments and are a source of inspiration both for keen foodies and the hospitality industry as a whole.
We also won the ‘Sustainable Practises’ award as the UK’s most sustainable bar at the Class Bar Awards two years in a row both in 2019 & 2020.
